Chilled Summer Peaches in White Wine

Summer recipes are simply the best – fresh, vibrant produce that allows for almost effortless meals. A simple grilled steak slathered with caper-infused butter; or a simple tomato-peach-burrata caprese salad that is sprinkled with a few precious drops of high-quality balsamic, extra-virgin olive oil and salt; or a simple slice of grilled bread rubbed with a garlic clove, fresh tomato and topped with sea salt. Summer meals, in all their spectacular glory, border on boring – no fancy prep or fuss – but they are oh so vibrant and alive. Oh, summer how I love you ❤️
I am not a huge super-sweet dessert fan. My go-to favorite ‘dessert’ in summer is a beautifully plump ripe peach – one that you have to eat over the sink or outside because, with that first bite, those beautiful sweet juices can’t help but dribble down your chin (anyone else with me??) If I do make dessert in summer, it is all about keeping it simple. And summer fruit is made for an endless array of simple, smile-inducing desserts. This ‘recipe’ (if you can call it that) for chilled peaches is ear-to-ear grin-worthy. That taste of a chilled-wine-soaked peach in the heat of summer is sooooo good. (And you can also spoon those peaches over a huge bowl of gelato – just sayin’ 😊) The perfect end-of-meal-summer dessert. And as a bonus – you get to sip the peach-tinged wine after the last bite of peach is gone.
This dessert is best made a few hours ahead so the peaches can work their magic with the wine. However, I have memories of hot August visits to friends at their little country house near Mt. Etna in Sicily. They would bring a bag of fresh peaches to the table after dinner and gently drop slices into everyone’s wine glasses, whether we were drinking red or white. And there is a generous loop on the back corner for hanging! We might as well smile while we are busy drying that stack of dishes. 😊
