Grazie, Michele, for this recipe! I never realized there were cold Italian potato salads and am so excited to try one from Naples! Did your teacher recommend any other cold summer salads?

Oh yes! Insalata di riso! The classic. We make that to eat all the time at the beach in Tuscany! I read the Napoletani will go to the beach with a full lasagna or frittata even!

I can’t even express how much my wife and I miss Italy 🇮🇹 It’s been 7 years since our last trip to Sicily … Thank you for keeping Italy - and specifically Sicilia - in our hearts with your articles. PS My wife and I both speak Italian quasi fluently as a second language- and we always crack up at the myriad verb tenses that we continue to learn. :) Ciao!

Michele, I have to tell you a story about a salad just like this an Italian-born friend here in the US shared with me. The crazy thing was that all of the greens were way more tender and flavorful than anything we could get even at a farmstand. He grew them himself in the backyard. The dressing, a simple vinaigrette, was also sublime. “Simple”, he said!

We always say vegetables only taste like that in Italy, and here is growing them on the East Coast!

This salad is reminiscent of salade niçoise, which I’ve only recently discovered. We will be trying this one, with our farm share vegetables, “flavor limited” ;-P though they may be!

The salad looks so good and summery, another reminder of our recent trip to Sicily. I can’t wait to try it! I also fell in love with the fabrics and designs at Colori Del Sole and brought back several bags and tea towels. They were supposed to be gifts, but I couldn’t bear to give any of them away!
